Volcanic Wines of Mt. Etna
Join us for our July Uncorked tasting as we explore the wines of Mt. Etna, Sicily's active volcano. Rising above the Mediterranean Sea, this remarkable wine region is producing some of Italy's most compelling wines. For fans of crisp Sancerre and elegant red Burgundy, Mt. Etna offers a distinctive expression shaped by volcanic soils, high elevations, and centuries of winemaking tradition.
Wine Director Simon Kaufmann will guide guests through a tasting that highlights the region's unique terroir, indigenous grape varieties, and growing reputation as one of the world's most exciting emerging wine destinations.

Summer Wellness Series: Sunrise Morning Yoga
Join us for a restorative morning of movement and mindfulness surrounded by the natural beauty of The Umstead Hotel and Spa.
Hosted in partnership with Dose Yoga, this guided outdoor yoga experience takes place beneath a canopy of woodlands on our Wedding Lawn, overlooking the rose garden and lake fountain. Designed to encourage presence, balance, and connection to the season, each session offers a tranquil start to the weekend within one of Cary’s most serene settings.
Following class, guests are invited to unwind in the Spa Courtyard with a complimentary seasonal fresh-pressed juice crafted on-site by Herons. Each guest will also receive a PATH water bottle to enjoy throughout the experience, supporting our continued sustainability efforts, along with palo santo to take home.

Summer Wellness Series: Sunset Floating Sound Bath
Join us on July 20th for an immersive evening of restoration and sensory healing surrounded by the tranquil beauty of The Umstead Hotel and Spa.
Hosted in partnership with Dose Yoga, this guided Sound Bath experience invites guests to unwind through healing frequencies, soft lighting, the sounds of nature, and gentle water within one of Cary’s most serene settings. Guests may choose to participate floating on the pool or poolside, allowing for a deeply calming and meditative experience designed to encourage presence, balance, and relaxation.
Each guest will be provided with a light blanket, weighted light-blocking eye mask, PATH water bottle, and post-experience electrolyte water to complete the evening.

Stone Edge Farm Estate Vineyard and Winery
Join us for a special edition of Uncorked as Wine Director Simon Kaufmann explores the wines of Stone Edge Farm Estate Vineyards & Winery. Located in Sonoma Valley, Stone Edge Farm is recognized for its commitment to regenerative farming, sustainability, and thoughtful stewardship of the land.
Their estate wines share the same respect for nature and sense of place that guide our own philosophy at Herons and One Oak Farm.
Throughout the evening, Simon will guide guests through a curated tasting of Stone Edge Farm wines while sharing the stories, vineyards, and farming practices behind each bottle.
Philippe Thibault, Director of Hospitality, from Stone Edge Farm will also be in attendance, offering firsthand insight into the winery's philosophy and approach to their regenerative agriculture.

Inspired by the harvests of One Oak Farm and Stone Edge Farm, this collaborative dining experience will feature a thoughtfully curated six-course menu showcasing the ingredients and philosophies that connect these two remarkable farms.
