Learn How We Grow Organic Fruits & Vegetables

The exquisite food and beverage offerings at The Umstead Hotel and Spa are a reflection of the bounty of fruits and vegetables from our hotel farm nearby. Our sustainable acreage, called One Oak Farm, is located less than a mile from the hotel. Chefs Greene and Thomson work closely with our Culinary Farm Team to grow unique, often heirloom varieties, of produce for our changing seasonal menus.

One Oak Farm under the guideance of our Culinary Farm Manager Daniel Holloman is devoted to sustainable farming practices, removing weeds by hand and naturally developing the soil. From micro-greens and edible flowers to heirloom tomatoes, peppers, and squashes, the harvest changes with the season. Fruit trees are a new addition to the farm, with apple and fig trees, as well as blueberry bushes already underway. In 2016, the farm began growing John Haulk Corn, an heirloom corn native to the Carolinas. We harvest and grind the kernels daily in-house to make our Herons grits.
